Fried Pickle Cheese Burgers

Ingredients

For the burger sauce:

  • 3 Tablespoons ketchup
  • 3 Tablespoons mayonnaise
  • 1 Tablespoon pickles minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder

For the fried pickles and onions:

  • 1 dill pickle cut into 1/2 inch slices
  • 1 small onion cut into rings
  • 1/2 c. ice cold water
  • 1 egg
  • 1/2 c. flour
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 c. vegetable oil

For the burgers:

  • 1 1/3 lb. ground beef
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 Tablespoon olive oil
  • 1/3 c. Monterey Cheese
  • 4 burger buns

Instructions

  • In a small bowl combine the ketchup, mayonnaise, minced pickles, salt, pepper, and garlic powder. Mix well and set aside.
  • In a medium bowl combine the ice cold water and egg. Whisk to combine. Add in the flour and mix until a thick batter forms. Add in salt and pepper.
  • Heat the vegetable oil in a small skillet over medium high heat. Once it is shimmering it is ready to use.
  • Dip the pickles into the tempura batter and let the extra batter run off. Place in the pan and cook for 2 minutes per side. Remove from the oil and place on a paper towel lined plate. Repeat with remaining pickle slices.
  • Then dip the onion rings into the tempura batter and let the extra batter run off. Put the onions in the pan for 2 minutes per side. Remove to paper towel lined plate.
  • Meanwhile, combine the ground beef, salt, pepper, and garlic powder. Divide into 4 burgers.
  • Heat the olive oil in a large skillet over medium high heat. Add the burgers and cook for 4-6 minutes per side or until cooked through.
  • Top each burger with cheese. Cover the pan and cook for 1 minute or until the cheese has melted.
  • To make the burgers put the burger sauce on the bottom bun. Place the burgers on top of the bun. Top with as many pickles as onions as you'd like.
