Preheat the oven to 425 degrees.
Trace your hand with a toothpick and cut out four hands from the pie crust . Place on a large baking sheet lined with parchment paper.
Brush egg over the edges and the fingers of two dough hand.
In a bowl toss the prickly pear, sugar, and vanilla.
Spoon half of pie filling in center of each hand. (I had a lot of leftover filling).
Top with the remaining two dough hands, pressing edges of hands together with a fork. Use a paring knife and add details to the hands to make it look as realistic as you possible. Brush with egg.
Bake until golden brown, 16 to 18 minutes. Filling may ooze out and that's ok. Cool on the pan for 10 minutes before serving. Chop in half and serve
