Tomato Quick Bread

A savory quick bread made with fresh tomatoes, Italian herbs, garlic, and cheese.

Ingredients

  • 3 c. all purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1/4 c. vegetable oil
  • 1/3 c. whole milk
  • 1 c. cheddar cheese shredded
  • 4 garlic cloves chopped
  • 1 lb. fresh tomatoes
  • 2 Tablespoons fresh basil chopped
  • 2 Tablespoons fresh oregano chopped

Instructions

  • Preheat the oven to 350 degrees.
  • Grease a loaf pan and set aside.
  • In a large bowl combine the flour, baking powder, and salt.
  • In another medium sized bowl combine the egg, oil, and milk. Mix well.
  • Stir the wet ingredients into the dry ingredients. Mix well.
  • Stir in the cheddar cheese.
  • Place the garlic, tomatoes, basil, and oregano in a food processor. Pulse until the tomatoes are chopped but the mixture is not completely smooth.
  • Fold the tomato mixture into the batter. The batter should be thick but moist.
  • Pour the batter into the prepared pan. Bake for 45-50 minutes or until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 10 minutes then turn onto a wire rack to cook completely.
