Air Fryer Persimmon Bread

Make this delicious holiday quick bread made with persimmons, cranberries, and pecan in the air fryer in a little over a half an hour!

Ingredients

For the Bread:

  • 1/2 c. 1 stick butter
  • 1 c. sugar
  • 2 eggs beaten
  • 1 teaspoon vanilla extract
  • 2 c. flour
  • 1 1/2 teaspoons cinnamon
  • 4 teaspoons baking soda
  • 1 teaspoon salt
  • 2-3 persimmons enough to make 1 1/2 c. pulp
  • 1/2 c. raisins
  • 1/2 c. craisins
  • 1/2 c. pecans chopped

For the frosting:

  • 1 c. powdered sugar
  • 4 Tablespoons cream cheese
  • 4 Tablespoons butter
  • 1 teaspoon vanilla extract

Instructions

  • If using the basket of an air fryer line it with parchment paper. If using a pan spray it with cooking spray.
  • Preheat the Air Fryer to 330 degrees.
  • In a large bowl cream together the butter and sugar.
  • Add in the eggs and vanilla and mix until well combined.
  • Add the flour, baking soda, cinnamon, and salt to the butter mixture and mix until combined.
  • Place the persimmons in a food processor and blend until smooth. Measure out 1 1/2 cups and add it to the bread mixture. Mix until just combined.
  • Fold in the raisins, craisins, and pecans.
  • Spoon the mixture into the air fryer on top of the parchment paper or pour it into your pan.
  • Bake for 30-45 minutes or until a toothpick inserted into the center comes out clean. Check after 30 minutes then every 5 minutes after that.
  • Remove the parchment paper or pan to a cooling rack and cool completely.
  • To make the frosting place the cream cheese and butter in a bowl and mix on medium high speed until smooth. Add in the powdered sugar and vanilla and mix for 2 minutes.
  • Spread the frosting over top of the bread, slice, and enjoy.
