If using the basket of an air fryer line it with parchment paper. If using a pan spray it with cooking spray.
Preheat the Air Fryer to 330 degrees.
In a large bowl cream together the butter and sugar.
Add in the eggs and vanilla and mix until well combined.
Add the flour, baking soda, cinnamon, and salt to the butter mixture and mix until combined.
Place the persimmons in a food processor and blend until smooth. Measure out 1 1/2 cups and add it to the bread mixture. Mix until just combined.
Fold in the raisins, craisins, and pecans.
Spoon the mixture into the air fryer on top of the parchment paper or pour it into your pan.
Bake for 30-45 minutes or until a toothpick inserted into the center comes out clean. Check after 30 minutes then every 5 minutes after that.
Remove the parchment paper or pan to a cooling rack and cool completely.
To make the frosting place the cream cheese and butter in a bowl and mix on medium high speed until smooth. Add in the powdered sugar and vanilla and mix for 2 minutes.
Spread the frosting over top of the bread, slice, and enjoy.
