Apple Cider Donut Cake

Ingredients

For the Cake:

  • 1 large or 2 small apples chopped
  • 1 1/2 cups apple cider
  • 2 1/2 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons apple pie spice
  • 8 Tablespoons salted butter
  • 3/4 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 3 eggs
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla
  • 1/2 cup milk

!For the Sugar Coating:

  • 6 Tablespoons granulated sugar
  • 1 teaspoon apple pie spice
  • 1 teaspoon cinnamon

Instructions

  • Preheat the oven to 350 degrees. Spray a Bundt pan with baking spray and set aside.
  • In a small saucepan combine the apple cider and chopped apples. Bring it to a boil over medium high heat.
  • Reduce heat to medium and cook for 10-12 minutes or until the apples are soft enough to mash.
  • Mash the apples and cook for an additional 1-2 minutes. Remove from heat.
  • In a medium bowl combine the flour, baking powder, salt, and apple pie spice. Set aside.
  • In a large bowl cream together the butter, sugar, and brown sugar.
  • Add the eggs and beat well to combine.
  • Add in the oil and vanilla and mix well.
  • Add half of the flour mixture to the butter mixture and mix well.
  • Add 1 cup of the apple and cider mixture and mix well.
  • Add remaining flour mixture and mix until just combined.
  • Pour into the prepared pan. Bake for 40-45 minutes.
  • Remove from oven and cool 10 minutes. Run a butter knife around the edges and flip to remove from pan.
  • Combine the ingredients for the spiced sugar topping.
  • While the cake is still warm brush 1/4 of it with apple cider and quickly sprinkle with the sugar mixture, pressing gently to make it stick to the cake. Repeat until the cake is covered.
  • Slice and enjoy!
