Apple Oatmeal Breakfast Bars

These Apple Oatmeal Breakfast Bars are soft and chewy and last for up to a week so they are great to make on the weekend and enjoy for breakfast all week long.

Ingredients

  • 4 Tablespoons butter melted
  • 1/2 c. apple butter
  • 1 teaspoon vanilla
  • 1 egg
  • 1/2 c. brown sugar
  • 1 1/2 c. Flahavan's Steel Cut Oatmeal
  • 1 c. flour
  • 1 teaspoon baking powder
  • 1/4 c. flax seeds
  • 2 teaspoons cinnamon
  • 1/2 c. milk
  • 2 small apples cored and chopped

Instructions

  • Preheat the oven to 375 degrees. Spray an 8 x 8 or 9 x 9 pan with baking spray.
  • In a large bowl combine the butter, apple butter, vanilla, egg, and brown sugar and mix well. Set aside.
  • In another large bowl combine the Flahavan's Steel Cut Oatmeal, flour, baking powder, flax seeds, and cinnamon.
  • Pour half of the oatmeal mixture into the bowl with the apple butter and mix well. Add in the milk and stir well.
  • Pour the rest of the oatmeal mixture into the bowl with the milk mixture and mix well.
  • Fold in the apples. Pour in the prepared baking dish.
  • Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool for 20 minutes and then cut into 12 bars.
  • Store in an air tight container for up to 1 week.
