I can't get enough of this Apple Pie Granola!

Apple Pie Granola

Ingredients

  • 3 c. rolled oats
  • 1 c. nuts chopped (I used almonds)
  • 1 Tablespoon apple pie spice or 2 teaspoons cinnamon, 1 teaspoon nutmeg, 1/2 teaspoon ground cloves
  • 1 teaspoon sea salt
  • 1 apple diced (I left the skin on but you can peel it if desired)
  • 1/3 c. coconut oil melted
  • 1/2 c. applesauce
  • 1/4 c. granulated sugar
  • 3 Tablespoons brown sugar

Instructions

  • Preheat the oven to 350 degrees. Line a baking pan with parchment paper or a silicon baking mat. Set aside.
  • In a large bowl combine the oats, nuts, apple pie spice, salt, and apples. Mix well and set aside.
  • In a small bowl combine the coconut oil, applesauce, granulated sugar, and brown sugar. Mix well.
  • Pour the sugar mixture over top of the oat mixture and mix well to combine. I ended up using my hands to mix it together.
  • Pour the granola onto the prepared baking pan. Spread it out in a thin layer.
  • Bake for 1 hour, stirring every 15 minutes.
  • Remove from oven and allow to cool for 30 minutes. Break into pieces and store in an air tight container for up to 1 week.

*If granola gets soft you can put it in the oven at 400 degrees for 5 minutes to crisp it back up*
