Baby Food Friday: Healthy Zucchini Muffins for Babies or Toddlers

Healthy Zucchini Muffins are a great way to get babies or toddlers to eat fruits and vegetables without all the added sugar.

Ingredients

  • 1 1/4 c. flour
  • 1/2 c. baby oatmeal or oats
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt optional
  • 1 teaspoon cinnamon
  • 2 eggs
  • 1 c. zucchini grated
  • 1/4 c. butter melted (or vegetable oil)
  • 1/2 c. applesauce
  • 2 bananas mashed
  • 1/2 c. chopped fruit strawberries, peaches, blueberries, or plums work well

Instructions

  • Preheat the oven to 350 degrees. Spray a mini muffin tin with cooking spray.
  • In a large bowl combine the flour, oatmeal, baking soda, salt, and cinnamon. Mix well and set aside.
  • In a small bowl beat the eggs.
  • Add the eggs, zucchini, butter, applesauce, and bananas to the dry mixture and mix until combined.
  • Fold in the fruit.
  • Pour the batter into the prepared muffin cups filling almost to the top of the cups.
  • Bake for 15-18 minutes or until golden brown.

Notes

**If freezing wrap the muffins in plastic wrap then place in a zip top freezer bag. Thaw on the counter 20 minutes before serving. Can be frozen for up to 3 months**
