Baked Oatmeal Cups

Baked oatmeal cups are loaded with fruit, lightly sweetened, and baked until tender.

Ingredients

  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 cup whole milk
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries
  • 1/2 cup fresh cranberries

Instructions

  • Preheat the oven to 350 degrees.
  • Spray a muffin tin with cooking spray and set aside.
  • In a large bowl combine the milk, eggs, maple syrup, and vanilla. Mix well.
  • Add in the oats, baking powder, cinnamon, and salt and mix well.
  • Divide the mixture in half.
  • Fold the blueberries into one half and cranberries into the other half.
  • Using a 1/4 cup cookie scoop, scoop the mixture into the prepared muffin tin.
  • Bake for 25-30 minutes.
  • Remove from oven and cool for 10 minutes before removing the oatmeal cups.
