Baked Sweet and Sour Chicken

Ingredients

For the chicken:

  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup cornstarch
  • 2 eggs beaten
  • 3 Tablespoons olive oil
  • 2 cups broccoli florets

For the sauce:

  • 1/3 cup granulated sugar
  • 1/4 cup ketchup
  • 1/2 cup vinegar
  • 2 Tablespoons honey
  • 3 Tablespoons soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon black pepper

Instructions

  • Preheat the oven to 375 degrees. Spray a 9 x 13 baking dish with cooking spray.
  • Cut the chicken breasts into 1 inch pieces. Season with the salt and pepper.
  • Pour the cornstarch into a shallow dish and the beaten eggs in another shallow dish. Dip the chicken into the cornstarch and then dip into the eggs.
  • Heat the olive oil in a large skillet over medium high heat. Cook the chicken for 2-3 minutes or until browned but not cooked through.
  • Place the chicken and broccoli in the prepared baking dish.
  • Mix all of the ingredients for the sweet and sour sauce in a bowl. Whisk until well combined and then pour evenly over the chicken and broccoli.
  • Bake for 45 minutes, stirring every 15 minutes.
  • Remove from oven and serve with rice.
