Banana Split Bread

Ingredients

  • 6 Tablespoons butter softened
  • 1/2 c. sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 3/4 c. flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 bananas mashed (about 1 cup)
  • 1 c. chocolate chips
  • 1/2 c. maraschino cherries drained and chopped
  • 1/2 c. pecans chopped

Instructions

  • Preheaat the oven to 350 degrees.
  • Spray a loaf pan with cooking spray. Set aside.
  • In a large bowl cream together the butter and sugar.
  • Add in the eggs and vanilla and mix well.
  • In a medium bowl combine the flour, baking powder, baking soda, and salt.
  • Add half the flour mixture to the butter mixture and mix well. Stir in the mashed bananas. Add the remaining flour mixture to the butter mixture and mix until just combined.
  • Fold in the chocolate chips, cherries, and pecans.
  • Pour the batter into the prepared pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Remove from the oven and cool for 10 minutes. Turn onto a wire cooling rack and cool completely.
