Preheat the oven to 350 degrees. Spray a 9 x 13 baking dish with cooking spray.
Pour the apple pie filling into the bottom of the pan and spread it around. Sprinkle with the chopped apples.
Pour the caramel sauce over top of the apples in the pan.
Sprinkle the white cake mix evenly over top of the apple mixture then sprinkle with the apple pie spice.
Melt the butter in the microwave. Whisk the vanilla into the butter.
Pour the butter mixture over top of the dry cake mix trying to moisten as much of the mix as you can.
Bake for 50 minutes or until the filling is bubbling.
Remove from oven and cool for 15 minutes.
Serve with whipped cream or ice cream.
