Caramelized Onion Hummus Dip

Hummus mixed with caramelized onions, roasted red peppers, and topped with cheese for a delicious appetizer dip.

Ingredients

  • 1 17 oz container Sabra Original Hummus
  • 1 red onion thinly sliced
  • 1 1/2 Tablespoons butter
  • 1 t. sugar
  • 1/3 c. roasted red peppers
  • 1/3 c. Vidalia Onion cheese crumbled (or feta if you can't find vidalia onion cheese)
  • 2 Tablespoons olive oil

Instructions

  • Place the hummus in a medium bowl. Set aside.
  • Preheat the oven to 350 degrees.
  • Melt the butter in a small skillet over medium heat. Add the onions and sugar and saute for 20 minutes, stirring occasionally, or until the onions have caramelized. Immediately pour the onions into the hummus and mix well.
  • Spread the hummus into a 7 x 11 or 8 x 8 baking dish. Place the roasted red peppers on top and then sprinkle with the cheese.
  • Bake in the oven for 10-12 minutes or until the cheese has melted.
  • Remove from the oven, drizzle with the olive oil, and serve with crackers or pita chips.
