Carrot Cake Bread

All the flavors of a carrot cake including carrots, raisins, and pecans in a tasty bread with a cinnamon glaze on top!

Ingredients

For the bread:

  • 1 1/2 c. flour
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon salt
  • 2 eggs
  • 1 c. sugar
  • 1/4 c. sour cream
  • 1 c. vegetable oil
  • 2 teaspoons vanilla
  • 1 c. carrots grated (about 4 carrots)
  • 1/2 c. raisins
  • 1/2 c. pecans chopped

For the glaze:

  • 1/2 c. powdered sugar
  • 1-2 Tablespoons milk
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with baking spray and set aside.
  • In a large bowl mix together the flour, baking powder, cinnamon, nutmeg, and salt.  Mix well. 
  • In a medium bowl mix together the eggs, sour cream, and sugar.  Add in the oil and vanilla and mix well to
    combine.  
  • Add the oil mixture to the flour mixture and mix well to combine.
  • Fold in the carrots, raisins, and pecans. 
  • Spread the batter into the prepared loaf pan.
  • Bake for 1 hour 10 minutes. Let cool for 15 minutes then run a knife around the edges and cool completely on a wire rack.
  • To make the glaze whisk all the glaze ingredients together in a small bowl. Place in a zip top baggie and drizzle over top of the bread.
  • Cut into slices and serve.
