Ingredients

For the cupcakes:

  • 1 box white cake mix
  • 3 eggs
  • 1/3 c. vegetable oil
  • 3/4 c. milk
  • 1/2 c. vanilla yogurt
  • 1/4 c. maraschino cherry juice
  • 1 Tablespoon vanilla
  • 1 c. white chocolate chips

For the frosting:

  • 3 sticks butter softened
  • 6 c. powdered sugar
  • 1 Tablespoon vanilla
  • 1/4 c. heavy cream
  • 3 Tablespoons maraschino cherry juice

For the top:

  • 24 maraschino cherries
  • Valentine's Day sprinkles

Instructions

  • Preheat the oven to 350 degrees. Line 2 muffin tins with cupcake liners and set aside.
  • In a large bowl combine the white cake mix, eggs, oil, milk, yogurt, cherry juice, and vanilla. Mix well for 2 minutes or until the batter is smooth. Fold in the white chocolate chips.
  • Fill the muffin cups 2/3 of the way full with the cupcake batter. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  • Cool completely on a wire rack.
  • To make the frosting place the butter in a large mixing bowl. Beat with a mixer on medium speed until smooth. Add in half of the powdered sugar and mix well.
  • Add in the vanilla, heavy cream, and cherry juice and mix for 1 minute.
  • Add in the remaining powdered sugar, a half cup at a time, until desired consistency is reached.
  • Pipe the frosting on top of the cooled cupcakes. Sprinkle with the sprinkles and place a cherry on top of each one.
