In a medium saucepan combine the cherries, sugar, 1 1/2 cups of water, mint leaves, and ginger.
Bring the mixture to a boil and simmer for 10 minutes. Mash the cherries with a potato masher to help release the juices.
Remove from heat and let sit 20 minutes.
Strain the syrup through a fine mesh sieve into a bowl. Add in one cup of water and the lemon juice. Mix well.
Pour the mixture into a pint sized mason jar and refrigerate until ready to use.
When ready to use combine ice, 1 cup of sparkling water, and 3-4 tablespoons of the cherry syrup in a glass. Garnish with mint leaves and cherries.
