Ingredients

  • 2 eggs
  • 1/3 cup sugar
  • 4 Tablespoons butter
  • 1 teaspoon vanilla
  • 2 Tablespoons milk
  • 1 c. flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/2 c. dried cranberries
  • 1 medium apple chopped

Instructions

  • Preheat the oven to 350 degrees. Line a muffin tin with cupcake liners.
  • In a bowl whisk together the eggs, sugar, and butter.
  • Add in the vanilla and milk and mix well.
  • In a small bowl combine the flour, baking soda, baking powder, cinnamon, and salt.
  • Add the flour mixture to the butter mixture and combine until batter is smooth.
  • Fold in the cranberries and apples.
  • Divide the batter between 10 muffin cups.
  • Bake for 16-18 minutes.
  • Remove from oven and cool completely.
