Crostini with Peas, Brie, and Honey

Enjoy a crunchy crostini topped with gooey Brie, fresh peas, crunchy almonds, and drizzled with honey.

Ingredients

  • 1 French baguette
  • 8 oz. Brie cheese in 1/4 inch thick slices
  • 1 c. fresh peas sliced diagonally
  • 1/3 c. almond slices
  • 1/4 c. honey
  • 1 Tablespoon sea salt
  • 1 Tablespoon black pepper

Instructions

  • Preheat the oven to 400 degrees. Spray 2 baking sheets with cooking spray.
  • Slice the baguette on a diagonal into 1 inch thick slices (about 16 pieces) and place them on the baking sheets.
  • Top each baguette with 2 slices of the Brie cheese. Bake for 6-8 minutes or until the brie is melted and bubbling.
  • Remove from the oven and top with 1-2 tablespoons of the sliced peas and then sprinkle with 1 tablespoon of almonds.
  • Drizzle the honey over top of the baguettes and then sprinkle with sea salt and pepper.
  • Bake for 2 minutes and remove from oven. Serve hot.
  • **For a twist drizzle a bit of balsamic vinegar over top of the crostini**
