Ingredients

For the Brownies:

  • 1/2 cup salt butter melted
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt optional

For the topping:

  • 3/4 cup pistachio cream
  • 2 cups kataifi toasted
  • 1-2 Tablespoons tahini optional
  • 3/4 cup chocolate chips or chocolate melts

Instructions

  • Preheat the oven to 350 degrees. Spray an 8 x 8 baking dish with cooking spray.
  • In a large bowl combine the butter, sugar, and vanilla.
  • Add in the eggs and mix well.
  • Stir in the cocoa powder and mix until well combined.
  • Add the flour, baking powder, and salt and mix well.
  • Pour the brownie batter into the prepared pan. Bake for 25-30 minutes or until the brownies are completely cooked through.
  • Remove from the oven and cool completely.
  • Meanwhile, mix together the pistachio cream, kataifi, and tahini (if using). Mix well then spread over top of the cooled brownies. Place in the freezer for 5 minutes.
  • Meanwhile, place the chocolate chips or chocolate melts in a microwave safe bowl and heat in 20 second intervals, stirring after each heating, until completely melted. Pour over top of the brownies.
  • Allow the chocolate on top to harden for 15-20 minutes then cut into 16 brownies.
