Put the cut up and pitted cherries in a cocktail shaker. Tear the mint leaves into pieces and put them in the shaker along with the rum. Use a tool and mash the three ingredients together.
Add in the lime juice and simple syrup.
Cover the cocktail shaker and shake well for 30 seconds.
Fill a tall glass with ice. Strain the mixture from the cocktail shaker into the glass filled with ice.
Top the glass off with seltzer water. Add in a few mint leaves.
Give it a stir with a cocktail stirrer. Garnish with lime and cherry.
