Greek Pita Pizza

Ingredients

For the pizza:

  • 1 Tablespoon olive oil
  • 4 pita breads
  • 1 Tablespoon red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon oregano
  • 1 garlic clove minced
  • ¼ small red onion halved and sliced thin
  • 6 pitted kalamata olives sliced
  • ½ c. sun-dried tomatoes julienned
  • ½ c. roasted red pepper hummus
  • ½ part-skim mozzarella cheese shredded
  • 4 Tablespoons crumbled feta cheese

For the Tzatziki:

  • ½ c. nonfat plain Greek yogurt
  • 3 Tablespoons cucumber finely diced
  • 1 clove garlic finely minced
  • 1 teaspoon white vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon oregano

Instructions

  • Mix together all the ingredients for the Tzatziki sauce. Mix well and refrigerate until ready to serve.
  • Preheat the oven to 450 degrees. Spray both sides of pitas with olive oil. Arrange them in a single layer on a baking sheet and bake for 5 minutes.
  • In a small bowl combine the olive oil, vinegar, oregano, and garlic. Mix in the salt and pepper.  Toss with the olives, onions, and sun dried tomatoes.
  • Spread 2 tablespoons of the hummus over each pita.  Sprinkle with 2 tablespoons of mozzarella.
  • Divide the vegetable mixture evenly over the cheese and then sprinkle with the feta.
  • Cook the pizzas for 6 minutes.  Remove from the over and serve with tzatziki sauce.
