Melt the butterscotch chips or candy melts in the microwave in 20 second intervals, stirring after each interval.
Once melted stir in the cookie butter. Mix until smooth.
Pour the mixture into a large bowl and add in the chow mein noodles and mini marshmallows. Mix until combined.
Drop by tablespoon onto wax paper. Press candy eyes onto the stacks before the mixture cools and hardens.
Allow to harden 1 hour.
