Ham and Bean Soup

Equipment

  • 1 large soup pot

Ingredients

  • 1 Tablespoon olive oil
  • 1 large onion chopped
  • 4 carrots chopped
  • 4 celery stalks chopped
  • 4 garlic cloves minced
  • 1 teaspoon paprika
  • 3/4 teaspoon dried thyme
  • Pinch of red pepper flakes optional
  • 6 cups chicken or vegetable broth
  • 2 cups ham chopped
  • 2 15 oz. cans of Northern Beans, rinsed and drained
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Instructions

  • Heat the olive oil in a large pot over medium heat.
  • Add in the onions, carrots, and celery and saute for 5 minutes.
  • Add in the garlic, paprika, thyme, and red pepper flakes if using. Stir well and saute for 1 minute.
  • Add in the chicken or vegetable broth and bring to a slow boil.
  • Stir in the chopped ham and Northern beans.
  • Simmer for 45 minutes.
  • Taste and add salt and pepper as needed.
