In a small saucepan combine the water, lemon juice, mint leaves, and honey.
Bring to a boil over high heat and boil for 5 minutes, stirring occasionally. Remove from heat and strain into a glass jar. Refrigerate until ready to use.
To make the iced tea bring 8 cups of water to a boil then pour into a large bowl. Add the tea bags or loose leaf tea in a tea ball. Steep for 10 minutes.
Pour the hot tea into a pitcher. Add in 4 cups of cold water.
Add 1/2 cup of the honey lemon mint simple syrup and stir well. Refrigerate until ready to serve.
To serve fill a glass with ice and pour the Honey Lemon Mint Iced Tea over top. Garnish with a lemon wedge and a mint leaf.
