Peel, core, and slice the apples. Place them in the Instant Pot.
Pour the water, apple pie spice, sea salt, and sugar on top of the apples and give it a stir.
Put the lid on the Instant Pot and hit manual or pressure cook.
Pressure cook on high for 10 minutes.
Allow the pressure to release for 10 minutes then manually release it.
Remove the lid, add in the vanilla, and use a potato masher to mash the apples to desired consistency.
If you'd like a smooth texture you can either put the applesauce in a food processor or use an immersion blender to blend until smooth.
Store in the refrigerator for up to 1 week.
