Instant Pot BBQ Baked Beans

You'll never go back to canned beans once you've made these easy, sweet, spicy, and completely delicious these BBQ Baked Beans.

Ingredients

  • 4 slices bacon diced
  • 1 small onion chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 teaspoons paprika
  • 1 teaspoon hot sauce
  • 3/4 c. chicken broth
  • 2 15.5 oz cans small white beans, drained and rinsed
  • 1/2 c. brown sugar
  • 1/4 c. molasses
  • 3 Tablespoons vinegar
  • 2 Tablespoons tomato paste
  • 2 Tablespoons bourbon
  • 1 Tablespoon spicy brown mustard

Instructions

  • Set the Instant Pot to saute on medium. Add the bacon and saute, stirring frequently, for 5 minutes. Remove to a paper towel lined plate.
  • Add the onion to the bacon grease in the pot and cook for 5 minutes, stirring occasionally.
  • Stir in the salt, pepper, paprika and hot sauce and saute for one minute.  Add the broth and scrape up the brown bits
    from the bottom. Turn off saute.
  • Add the beans, brown sugar, molasses, vinegar, tomato
    paste, bourbon, and mustard to the Instant Pot.  Cook on high pressure for 10 minutes.
  • Once the time is up manually release the pressure. Carefully remove the lid. Put the pot on saute and cook the beans, stirring frequently, until they have thickened, about 5 minutes.
  • Stir in the reserved bacon and cook for 1-2 minutes.
