215.5 oz cans small white beans, drained and rinsed
1/2c.brown sugar
1/4c.molasses
3Tablespoonsvinegar
2Tablespoonstomato paste
2Tablespoonsbourbon
1Tablespoonspicy brown mustard
Instructions
Set the Instant Pot to saute on medium. Add the bacon and saute, stirring frequently, for 5 minutes. Remove to a paper towel lined plate.
Add the onion to the bacon grease in the pot and cook for 5 minutes, stirring occasionally.
Stir in the salt, pepper, paprika and hot sauce and saute for one minute. Add the broth and scrape up the brown bits from the bottom. Turn off saute.
Add the beans, brown sugar, molasses, vinegar, tomato paste, bourbon, and mustard to the Instant Pot. Cook on high pressure for 10 minutes.
Once the time is up manually release the pressure. Carefully remove the lid. Put the pot on saute and cook the beans, stirring frequently, until they have thickened, about 5 minutes.
Stir in the reserved bacon and cook for 1-2 minutes.
