Japanese Carrot Ginger Dressing

A sweet and tangy carrot dressing perfect over top of iceberg lettuce.

Equipment

Ingredients

  • 1 cup carrots peeled and chopped
  • 1/2 onion peeled and chopped
  • 2 Tablespoons ginger peeled and finely chopped
  • 1 Tablespoon granulated sugar
  • 4 garlic cloves minced
  • 1/3 cup soy sauce
  • 1/2 cup rice wine vinegar
  • 1/3-1/2 cup vegetable oil

Instructions

  • Combine the carrots, onions, ginger, sugar, garlic, soy sauce, and rice wine vinegar in a blender or food processor. Blend for 30 seconds.
  • Add in the vegetable oil and blend for 30 seconds or until the dressing is mostly smooth but still has some texture.
  • Place in an air tight container and refrigerate for up to 5 days.
