Lemon Dijon Beef Roast

A delicious beef roast rubbed with a lemon herb mustard sauce.

Ingredients

For the beef roast:

  • 4 lb. Certified Angus Beef ® brand Bone-In Standing Rib Roast
  • 1 Tablespoon kosher salt
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder
  • 1 teaspoon sage
  • 2 Tablespoons Dijon mustard
  • 1 Tablespoon olive oil
  • 2 teaspoons balsamic vinegar
  • 1 Tablespoon lemon juice

For the lemon herb butter:

  • 2 Tablespoons butter melted
  • 1 Tablespoon lemon juice
  • 1 Tablespoon fresh sage chopped

Instructions

  • Preheat the oven to 450 degrees.
  • In a small bowl combine the salt, pepper, garlic powder, and sage.
  • Add the Dijon mustard, olive oil, vinegar, and lemon juice to the bowl with the seasonings and mix well.
  • Place the rib roast on a rack inside of a roasting pan.
  • Cover the rib roast with the mustard mixture.
  • Place the rib roast in the oven for 15 minutes. Reduce heat to 325 degrees and continue cooking for 1 hour 59 minutes (for medium-rare roast).
  • Remove from the oven.
  • In a small bowl combine the butter, lemon juice, and sage. Brush this mixture on the hot rib roast.
  • Cover and let stand 10-15 minutes.
  • Cut the roast in between the bones and enjoy!
