Ingredients
For the cupcakes:

baking powder

For the filling:

lime curd
For the buttercream frosting:

butter

powdered sugar

Instructions
Preheat the oven to 350 degrees. Line 2 muffin tins with cupcake lines.
In a medium bowl combine the flour, baking powder, and salt. Mix and set aside.
In a large bowl cream together the butter and sugar. Mix in the eggs and vanilla.
Add half of the flour mixture to the butter mixture and mix well.
Add the lime juice, lime zest, and milk to the bowl with the butter mixture and mix well to combine.
Add in the remaining flour mixture and mix until smooth.
Pour the batter into the prepared muffin tins filling 2/3 of the way full.
Bake for 25 minutes. Remove from oven and cool completely.
Once the cupcakes are cooled cut a piece out of the top and down into the center and remove. Set next to the cupcake.
Fill the hole with 1 teaspoon lime curd then replace the cupcake top. Set aside.
To make the buttercream place the butter in a large bowl and mix on medium speed with a mixer.
Add in half the powdered sugar, the vanilla, lime juice, milk, and lime zest and beat for 1 minute.
Add remaining powdered sugar and beat until desired consistency is reached.
Pour frosting into a piping bag and pipe onto the cupcakes.
Sprinkle with green sprinkles if desired.
