Mapo Tofu

A delicious combination of tofu and ground pork along with carrots and peas.

Equipment

Ingredients

  • 1 Tablespoon olive oil
  • 1/2 onion diced
  • 1/2 pound ground pork
  • 4 garlic cloves minced
  • 1/2 cup vegetable broth
  • 1 Tablespoon oyster sauce
  • 1 Tablespoon soy sauce
  • 14 oz. extra firm tofu drainer
  • 2 cups frozen peas and carrots
  • 1/4 cup water
  • 1 Tablespoon cornstarch
  • 1 green onion chopped
  • 4 cups rice cooked

Instructions

  • Heat the olive oil in a large skillet over medium high heat.
  • Add in the onion and saute for 2-3 minutes.
  • Add in the ground pork and stir until it is no longer pink.
  • Add in the garlic and cook for 1 minute.
  • Stir in the vegetable broth, oyster sauce, and soy sauce and bring to a simmer.
  • Add in the tofu, peas, and carrots. Cover and cook for 2-3 minutes.
  • In a small bowl combine the cornstarch and water. Pour into the skillet and mix well. Continue cooking for 2 minutes or until the sauce has thickened.
  • Remove from heat and stir in the green onions.
  • Serve over top of rice.
