Mapo Tofu
A delicious combination of tofu and ground pork along with carrots and peas.

oyster sauce

soy sauce

extra firm tofu
drainer

cups
frozen peas and carrots

cup
water

cornstarch

green onion
chopped

rice
cooked
Instructions
Heat the olive oil in a large skillet over medium high heat.
Add in the onion and saute for 2-3 minutes.
Add in the ground pork and stir until it is no longer pink.
Add in the garlic and cook for 1 minute.
Stir in the vegetable broth, oyster sauce, and soy sauce and bring to a simmer.
Add in the tofu, peas, and carrots. Cover and cook for 2-3 minutes.
In a small bowl combine the cornstarch and water. Pour into the skillet and mix well. Continue cooking for 2 minutes or until the sauce has thickened.
Remove from heat and stir in the green onions.
Serve over top of rice.
