Mediterranean Hummus Stuffed Mushrooms

Snack time goes Mediterranean with mushrooms stuffed with Sabra hummus, feta cheese, roasted red peppers, and breadcrumbs.

Ingredients

  • 1 lb. whole mushrooms
  • 1/2 c. Sabra classic hummus
  • 1/4 c. Panko breadcrumbs
  • 2 Tablespoons roasted red peppers chopped
  • 1-2 teaspoons lemon juice
  • 3 Tablespoons feta cheese crumbled
  • 1 teaspoon dried chives

Instructions

  • Preheat the oven to 400 degrees.
  • Wash the mushrooms and pull out the stems.
  • Spray a 9 x 13 baking dish with baking spray and place the mushrooms, hole side up, in the dish.
  • In a medium bowl combine the Sabra hummus, breadcrumbs, red peppers, lemon juice, feta, and chives. Mix well.
  • Place 1-2 teaspoons of filling in each mushroom cap. Mound the filling up on top of the mushroom.
  • Bake for 13-15 minutes or until the filling starts to brown. Broil for 1 minute.
  • Remove from the oven and enjoy immediately.
