Preheat the oven 350 degrees. Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, beat the eggs. Stir in the brown sugar, granulated sugar, vanilla, corn syrup, baking soda, and salt. Mix in the melted butter, applesauce, and peanut butter or cookie butter. Stir until well combined.
Slowly add in the oats and flour. Mix in the chocolate chips, butterscotch chips, white chocolate chips, and M & M’s. Set aside for 10 minutes.
Drop the dough by heaping tablespoon onto the parchment lined baking sheets, pressing to flatten the dough. Bake for 12-14 minutes or until the cookies are starting to brown. Let cool for two minutes then transfer to a wire rack to finish cooling.
