Equipment

Ingredients

  • 2 Tablespoons loose leaf tea any fruit flavor
  • 3/4 cup whole milk
  • 2 1/4 cups all purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cardamom
  • 6 Tablespoons salted butter
  • 3/4 cup light brown sugar packed
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh peaches peeled and chopped

Instructions

  • Preheat the oven to 375 degrees. Spray a loaf pan with cooking spray and set aside.
  • Place the milk in a small saucepan over medium heat. Add 1 tablespoon of tea leaves and simmer over medium low heat for about 10 minutes.
  • In a large bowl combine the flour, baking powder, baking soda, salt, and cardamom. Crush the remaining tea leaves and add to this mixture.
  • In a medium bowl mix the softened butter, brown sugar, egg, and vanilla.
  • Take the tea milk off the stove and strain to remove the tea leaves. Mix the milk with the other wet ingredients.
  • Add the flour mixture to the butter mixture and mix well to combine.
  • Gently fold in the peaches until just mixed in.
  • Pour the batter into the prepared loaf pan. Bake for 55-65 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
