Pear Ginger Bread

Forget dull and dry breads, try this tasty Pear Ginger Bread with juicy
butterscotch pears and spicy crystalized ginger. It's a sweet and
spiced treat.

Ingredients

  • 1 3.4 c. flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground allspice
  • 1/2 teaspoon salt
  • 6 Tablespoons butter
  • 1 c. brown sugar
  • 1 egg
  • 1 teaspoon vanilla bean paste
  • 1/2 c. milk
  • 1 large Butterscotch pear chopped
  • 3 Tablespoons crystalized ginger minced
  • 3/4 c. powdered sugar
  • 1-2 Tablespoons milk
  • 1 teaspoon ground ginger

Instructions

  • Preheat the oven to 350 degrees. Spray a loaf pan with cooking spray and set aside.
  • In a large bowl combine the flour, baking soda, baking powder, salt, and allspice. Mix and set aside.
  • In another large bowl cream together the butter and brown sugar.
  • Add in the egg and vanilla paste and mix until combined.
  • Add half the flour mixture to the butter mixture and mix until combined. Add in the milk and mix until the milk is incorporated. Add the remaining flour and mix until just combined.
  • Fold in the pears and crystalized ginger.
  • Pour the batter into the prepared pan. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool for 10 minutes then run a butter knife around the edges of the bread and remove from the pan. Cool completely on a wire rack.
  • To make the glaze whisk together the powdered sugar, milk, and ground ginger. Add more milk if needed.
  • Drizzle the glaze over top of the bread and let set 15 minutes.
  • Slice and serve.
