Allow the frozen bread dough to thaw for 6 hours and rise in a loaf pan.
Preheat the oven to 400 degrees.
Bring the water and baking soda to a boil on the stove in a large stock pot over high heat.
Turn the bread dough on to a lightly floured surface and stretch into a 12 x 6 rectangle. Using a pizza cutter, cut into one inch squares.
Boil the pretzel bites in batches of 12-15 pieces. Boil for 30 seconds then turn them over and boil an additional 20 seconds.
Remove the pretzel bites with a slotted spoon and place on a paper towel lined baking sheet.
Repeat with remaining pretzel bites.
Brush a Bundt pan with one tablespoon of the butter. Place half the pretzel bites in the Bundt pan lightly pressing the bites together. Drizzle with one tablespoon of butter and sprinkle with salt.
Place the remaining pretzel bites in the Bundt pan and drizzle with remaining butter and sprinkle with salt. Brush the tops with the egg yolk.
Bake for 30-35 minutes or until the monkey bread is golden brown.
Remove from pan and loosen the edges with a butter knife. Allow to cool for 10 minutes then flip over onto a plate.
Place a small bowl in the middle of the bread and fill with cheese sauce or mustard. Serve warm.
