Slow Cooker Beef Vegetable Soup

Ingredients

  • 2 carrots peeled and chopped
  • 2 celery stalks chopped
  • 1 onion chopped
  • 4 cloves garlic minced
  • 1 Tablespoon olive oil
  • ½ pound beef stew meat cut into 1 inch pieces
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 6 c. beef or vegetable broth
  • 1 can corn
  • 1 can green beans
  • 1 can peas
  • 1 can of diced tomatoes I used the one with garlic and onion added
  • 1 potato-peeled and cubed
  • 1 teaspoon sage
  • 1 teaspoon thyme

Instructions

  • In a skillet heat the olive oil over medium high heat. Add in the onions, celery, and carrots and saute for 5 minutes. Add in the garlic cloves and saute an additional minute.
  • Push the vegetables to the side of the pan and add the beef. Saute for 5 minutes or until the beef is browned.
  • Add the mixture to the slow cooker.
  • Pour the beef or vegetable broth into the slow cooker on top of the meat
    and veggies.
  • Add the corn, green beans, peas, tomatoes, and potatoes. Mix well. Sprinkle with sage and thyme. Mix again.
  • Cover and cook on low for 8 hours.
