Slow Cooker Honey Sesame Chicken

Ingredients

  • 2-3 lb. boneless chicken thighs
  • 1/2 c. ketchup
  • 1/2 c. low sodium soy sauce
  • 1/4 c. rice vinegar
  • 1/4 c. honey
  • 1 teaspoon Sriracha
  • 2 teaspoons sesame oil
  • 1 Tablespoons ginger finely chopped
  • 4 garlic cloves minced
  • black pepper
  • 2 c. broccoli florets
  • 2 bell peppers roughly chopped
  • 4 c. rice cooked
  • Sesame Seeds

Instructions

  • COmbine the ketchup, soy sauce, rice vinegar, honey, Sriracha, sesame oil, ginger, garlic, black pepper, and 1 cup of water in the slow cooker. Mix well.
  • Set the chicken thighs on top of the sauce and spoon sauce over top of the chicken thighs.
  • Cook on low for 7-8 hours or on high for 3-4 hours.
  • Add the broccoli and peppers to the slow cooker, spoon sauce on top of them, and cook on low for an additional hour.
  • Serve over rice and sprinkle with sesame seeds.
