Slow Cooker Italian Pot Roast Sandwiches

Ingredients

  • 3 lb. bottom round roast I used Certified Angus Beef Brand
  • Kosher salt and black pepper
  • 1 onion chopped
  • 2 bell peppers cut into strips
  • 1 Tablespoon Italian seasoning
  • 6 garlic cloves minced
  • 1/2 c. red wine
  • 3 c. beef stock
  • 6 hoagie rolls

Instructions

  • Rub the bottom round roast with salt and pepper and place in the slow cooker.
  • Sprinkle the onions and peppers around the roast in the slow cooker.
  • Add in the Italian seasoning, garlic cloves, red wine, and beef stock.
  • Cook on low for 8 hours.
  • Pull the beef into chunks and mix with the vegetables and beef stock in the slow cooker.
  • Put the beef, onions, and peppers on each of the hoagie rolls and then spoon out some of the au jus to dip the sandwiches in. Enjoy!
