Strawberry Shortcake Pancakes with Homemade Syrup

Ingredients

For the strawberry syrup:

  • 1/2 strawberries chopped
  • 1/2 c. water
  • 1 c. brown sugar
  • 4 Tablespoons butter
  • 1 teaspoon vanilla

For the pancakes:

  • 1 ½ c. flour
  • 3 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • 2 Tablespoons sugar
  • 1 ¼ c. buttermilk
  • 1 egg beaten
  • 3 Tablespoons melted butter

For the topping:

  • 6 strawberries sliced
  • 1/4 c. whipped cream

Instructions

  • In a small saucepan combine the strawberries and water over high heat. Bring to a boil and boil for 7 minutes.
  • Strain through a fine mesh sieve. Return a half cup of the strained juice to the pan along with the brown sugar. Bring to a boil over high heat. Cook for 5 minutes.
  • Add in the butter and boil for an additional 2 minutes. Remove from heat and stir in the vanilla. Remove from heat.
  • To make the pancakes combine all the ingredients in a bowl and whisk until smooth.
  • Heat a large saute pan over medium high heat. Spray with cooking spray.
  • Pour a quarter cup of pancake batter into the pan in two different places. Cook for 2 minutes per side. Remove from pan and repeat with remaining pancake batter.
  • Stack three pancakes on each of three plates. Top with a small handful of sliced strawberries, strawberry syrup, and whipped cream. Enjoy!
