Sugar Cookie Bars

A soft and delicious sugar cookie topped off with buttercream frosting.

Ingredients

For the cookies:

  • 1 c. 2 sticks butter
  • 2 c. sugar
  • 4 eggs
  • 1 Tablespoon vanilla
  • 5 c. flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 c. sprinkles

For the frosting:

  • 1 c. 2 sticks butter
  • 4 c. powdered sugar
  • 1 Tablespoon vanilla
  • pink food coloring

Instructions

  • Preheat the oven to 375 degrees.
  • In a large bowl cream together the butter and sugar.
  • Add in the eggs and vanilla and mix well.
  • In a medium bowl combine the flour, baking soda, salt, and sprinkles. Mix well.
  • Add the dry ingredients to the wet ingredients and mix well.
  • Cover a cookie sheet with parchment paper and press the cookie dough into the pan.
  • Bake for 15 minutes.
  • Remove the pan from the oven and cool completely on a wire rack.
  • To make the frosting place the butter in a large bowl and beat with a mixer until smooth. Add in the powdered sugar a half cup at a time until desired consistency is reached.
  • Mix in the vanilla and pink food coloring.
  • Spread the frosting over top of the cookies and add more sprinkles if desired. Cut into squares and serve.
