Sweet and Spicy Pork Stir Fry

Ingredients

  • 1 lb. pork loin
  • 1 lb. Asian vegetables cut into 1 inch pieces (I used broccoli, peppers, carrots, and
  • Salt and pepper
  • 1 Tablespoon Sriracha
  • ΒΌ c. soy sauce
  • 2 Tablespoons sweet BBQ sauce
  • 2 teaspoons brown sugar
  • 4 garlic cloves minced
  • 1 teaspoon sesame oil
  • 1 teaspoon ginger grated
  • 1/4 c. water
  • 3 green onions chopped
  • 3 Tablespoons sesame seeds
  • 4 c. jasmine rice cooked

Instructions

  • Cut the pork loin in half length wise. Then slice each half into very thin pieces.
  • Add 1 teaspoon olive oil in a large skillet over medium heat. Add the pork and saute for 5 minutes.
  • Add the remaining olive oil and the vegetables to the skillet and cook for 7-8 minutes.
  • In a medium bowl combine the Sriracha, soy sauce, BBQ sauce, brown sugar, garlic cloves, sesame oil, ginger, and water. Mix well and pour over top of the pork and vegetables.
  • Cook for 2-3 minutes or until everything is coated with the sauce.
  • Serve over top of rice and sprinkle with green onions and sesame seeds.
