Preheat the oven to 325 degrees. Spray a 9 x 13 baking dish with cooking spray and set aside.
In a large skillet over medium heat melt the butter.
Add in the mushrooms, onions, and celery and saute for 5 minutes. Add in the garlic and cook for 1 additional minute.
Pour in the chicken stock, fresh herbs, dried herbs, salt, and pepper. Let simmer for 1 minute.
Place the bread cubes in the prepared baking dish and pour the mushroom mixture over top making sure to moisten all the bread cubes. You may need to stir the stuffing to combine.
Bake for 45 minutes or until the top begins to brown.
Remove and enjoy.
