White Chocolate Macadamia Nut Cookies

Ingredients

  • 2 sticks butter softened
  • 1 c. brown sugar lightly packed
  • 1/2 c. sugar
  • 2 eggs
  • 1 Tablespoon vanilla
  • 2 1/2 c. flour
  • 1/2 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon nutmeg
  • 1 1/2 c. white chocolate chips
  • 3/4 c. macadamia nuts roughly chopped

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl cream together the butter, brown sugar, and white sugar.
  • Add in the eggs and beat until smooth. Mix in the vanilla.
  • In a medium bowl combine the flour, baking soda, salt, and nutmeg. Mix well to combine.
  • Add the dry ingredients to the wet ingredients and mix until a dough forms.
  • Fold in the white chocolate chips and nuts. Refrigerate for 1 hour.
  • Spoon heaping tablespoons onto baking sheets 3 inches apart. Bake for 10-13 minutes or until the cookies are firm.
  • Remove from over and allow to cool for 2 minutes before removing to a wire rack to cool completely.
