Ingredients

  • 1 teaspoon cinnamon
  • 1/2 teaspoon coriander
  • 1 teaspoon cardamom
  • 1 teaspoon ginger
  • 2 Tablespoons sugar
  • 2 1/2 c. flour
  • 1 1/2 teaspoons baking soda
  • 14 Tablespoons butter
  • 1 c. brown sugar
  • 1 teaspoon salt
  • 2 Tablespoons corn syrup
  • 1/4 c. water
  • 1 teaspoon vanilla

Instructions

  • In a medium bowl combine the cinnamon, coriander, cardamom, ginger, sugar, flour, and baking soda. Mix well and set aside.
  • In a large bowl cream together the butter, brown sugar, and salt.
  • Add in the corn syrup and vanilla and mix well.
  • Add the flour mixture to the butter mixture and mix until combined.
  • Add the water and stir until a dough forms.
  • Sprinkle a surface with flour and roll the dough to 1/8 inch thickness. Cut the dough into circles or squares and place on cookie sheets.
  • Chill dough for 15 minutes.
  • Preheat the oven to 350 degrees.
  • Remove cookie sheets from refrigerator and bake in the oven for 15-18 minutes.
  • Remove from the oven and cool for 5 minutes on the cookie sheets before removing to a wire rack to cool completely.
