Lime Poke Cake

A boxed yellow cake mix gets a boost from lime flavored gelatin and a delicious frosting.

Ingredients

  • 1 yellow boxed cake mix
  • 1 c. water
  • 1/2 c. oil
  • 3 eggs
  • 1 package 3 oz lime gelatin
  • 1 container 8 oz Cool Whip
  • 2 c. powdered sugar
  • 2 t. vanilla
  • green sprinkles

Instructions

  • Preheat the oven to 350 degrees.
  • Spray a 9 x 13 pan with cooking spray and set aside.
  • In a bowl combine the cake mix, water, oil, and eggs. Mix well and pour into the prepared pan.
  • Bake according to the packages directions. Remove from oven and cool on a wire rack for 20 minutes.
  • In a medium sized bowl combine the lime gelatin with 1 cup of boiling water. Stir until the gelatin is dissolved. Add another 1/3 cup of cold water and mix well.
  • Using the end of a wooden spoon or a skewer poke holes all over the semi-cooled cake.
  • Pour the gelatin mixture slowly over the top of the cake until it is all absorbed.
  • Refrigerate for 2 hours.
  • To make the frosting mix the Cool Whip, powdered sugar, and vanilla in a large bowl with a hand mixer on medium speed. The consistency will be like marshmallow cream.
  • Spread the frosting all over the cake. Top with sprinkles.
