Greek Couscous Salad

Couscous salad made with sun dried tomatoes, red onions, olives, and feta cheese then tosses in a light lemon vinaigrette.

Ingredients

  • 1 c. water
  • 1 c. dry couscous
  • 1 1/2 T. olive oil
  • 3 T. red wine vinegar
  • 2 T. lemon juice
  • 1 t. oregano
  • 1 garlic clove minced
  • 1/4 c. sun dried tomatoes chopped
  • 1/2 cucumber chopped
  • 1/4 red onion chopped
  • 3 T. olives chopped
  • 1 t. salt
  • 1 t. black pepper
  • 3 oz. crumbled feta cheese

Instructions

  • Cook the couscous according to the package directions. Set aside.
  • In a small bowl whisk together the olive oil, vinegar, lemon juice, oregano, and garlic.  Set aside.
  • Put the tomato, cucumber, onion, and olives in a medium bowl.  Toss with the dressing.
  • Stir the couscous into the vegetable mixture.  Add in the salt, pepper, feta cheese and gently stir to combine.
