Holy Shiitake Mellow Mushroom Pizza

Pizza crust brushed with garlic butter and sprinkled with Parmesan cheese then topped off with homemade sauce, cheese, caramelized onions, bacon, and mushrooms.

Ingredients

For the Crust:

  • 1 1/2 c. warm water 110 degrees
  • 2 Tablespoons molasses
  • 2 packets active yeast
  • 3 3/4 c. flour
  • 1 teaspoon salt
  • 1 Tablespoon olive oil
  • 3 Tablespoons salted butter melted
  • 4 garlic cloves minced
  • 3 Tablespoons Parmesan cheese

For the Pizza Toppings:

  • 1 Tablespoon salted butter
  • 2 onions thinly sliced
  • 2 teaspoon sugar
  • 1 1/2 c. homemade tomato sauce
  • 1 1/2 c. mozzarella cheese
  • 1/2 c. sliced mushrooms
  • 4 slices bacon cooked and chopped

Instructions

  • Place the hot water in a mixing bowl and stir in the molasses. Sprinkle the yeast on top and gently stir it in. Allow to sit for 10 minutes.
  • Mix together the flour and salt. Add the flour mix and the olive oil to the yeast mixture.
  • Stir the flour mixture together until a sticky dough forms.
  • Cover a surface with flour and knead the dough for 5 minutes. It will still be somewhat sticky. Roll it into a ball.
  • Lightly grease a bowl and place the dough ball in the bowl. Cover with plastic wrap and allow to sit in a warm place for 2 hours or until it's more then doubled.
  • Meanwhile, make the caramelized onions by placing 1 tablespoon sea salt butter in a medium skillet. Heat over medium heat until melted.
  • Add the onions and sugar and mix together. Cook for 20 minutes, stirring occasionally, until the onions are caramelized. Remove from pan.
  • Preheat the oven to 450 degrees. Gently push down the pizza dough and divide in half.
  • Sprinkle a pizza pan with cornmeal and stretch one half of the dough into the pan.
  • Combine the sea salt butter and garlic in a small bowl. Brush the entire crush with the mixture and sprinkle with half the Parmesan cheese.
  • Bake the crust for 8 minutes or until it's partially baked.
  • Remove from oven and top the crust with sauce and cheese. Place the mushrooms all over the cheese. Spread the caramelized onions on top and sprinkle with the bacon.
  • Bake in the oven for 7-10 minutes or until the cheese is melted and the crust is golden brown.
  • Remove from oven and brush remaining garlic butter on the crust and sprinkle with remaining Parmesan cheese.

Notes

**Wrap remaining pizza crust in plastic wrap and place in a freezer bag. Freeze for up to 3 months**
