Broiled Salmon with Butter and Herbs + Wild Alaskan Company

Ingredients

  • 4 6 oz salmon filets
  • 4 tablespoons butter
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/4 c. fresh chives chopped
  • 1/4 c. fresh cilantro chopped
  • 3 garlic cloves minced
  • 2 tablespoons lemon juice
  • 2 tablespoons breadcrumbs
  • 3 tablespoons fresh grated Parmesan

Instructions

  • Turn your oven broiler on high and place a cast iron skillet in the oven for 7-8 minutes.
  • Meanwhile, melt the butter and place it in a shallow dish.
  • Combine the chives, cilantro, and garlic in a small bowl and mix to combine.
  • Remove the skillet from the oven. Immediately dip the salmon into the melted butter coating both sides. Place the fish skin side down in the skillet. Sprinkle with salt and pepper.
  • Place the skillet under the broiler for 3-4 minutes.
  • Remove from oven and divide the herb mixture on top of the filets. Then sprinkle with lemon juice.
  • FInally, divide the breadcrumbs then the Parmesan cheese on top of the salmon.
  • Put the skillet back under the broiler for 5 minutes or until the salmon reads at 145 degrees.
  • Serve immediately.
