Sheet Pan Chicken with Sourdough Croutons and Bacon

Ingredients

  • 1/2 sourdough boule cut into 2 inch pieces
  • 1/2 lb. bacon cut into 1 inch pieces
  • 1 large potato cut into quarters and then into 1/2 inch wedges
  • 1 red onion cut into 1 inch wedges
  • 2 Tablespoons cold butter diced
  • 2 Tablespoons olive oil
  • 2 teaspoons oregano
  • 2 teaspoons garlic powder
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 6 small chicken breasts or 3 large chicken breasts cut in half
  • 1/2 lb. broccoli florets asparagus, or green beans (optional)

Instructions

  • Preheat the oven to 400 degrees.
  • Toss the bread, bacon, potato, onion, butter, olive oil, oregano, garlic powder, salt, and pepper on a large rimmed baking sheet. Spread in an even layer.
  • Season the chicken with salt and pepper and place on top of the bread mixture.
  • Bake for 45 minutes, stirring once after about 20 minutes. At this point you can add the green vegetable to the sheet pan if desired.
  • Cook until the bread is crisp and the chicken is cooked through.
