Ingredients

  • 1/2 c. 1 stick butter
  • 1/4 c. sugar
  • 1/2 c. brown sugar
  • 1 large egg
  • 1/2 c. light corn syrup
  • 2 teaspoons vanilla extract
  • 2 teaspoons maple extract or 1 Tablespoon maple syrup
  • 2 1/2 c. flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/4 cup sugar for rolling

Instructions

  • Preheat the oven to 350 degrees.
  • In a large bowl cream together the butter, sugar, and brown sugar.
  • Add in the egg, corn syrup, vanilla, and maple and mix well until combined.
  • In a medium bowl combine the cinnamon, nutmeg, baking soda, and salt. Mix well.
  • Add the dry ingredients to the wet ingredients and mix until a dough forms.
  • Roll dough balls that are one and a half inches in diameter and roll in the remaining 1/4 cup of sugar. Place them on a cookie sheet at least 2 inches apart.
  • Bake the cookies for 10-12 minutes or until the look set. Remove from oven and allow to cool for 1-2 minutes before removing to a wire rack to cool completely.
